PORK BELLY SKEWERS WITH CUCUMBER RIBBONS

Ingredients:

400g Pork Belly, sliced into 1inch cubes

β…” cup AFR Ginger Soy sauce

2 large telegraph cucumbers

AFR coconut salt, to garnish


Method:

Place the pork belly pieces into a container with the ginger soy sauce until covered and marinade for 2 hours or overnight. 

Using a peeler or mandolin, create long ribbons of cucumber. 

Heat a large pan over a medium heat with a tablespoon of oil. Once hot, place in the pork belly 

pieces using tongs and reserving the marinade to one side. Cook for 3-4 minutes on all sides, until golden. Once cooked, add 2 tablespoons of water to deglaze the pan and ΒΌ cup of the reserved marinade. Heat for 3 minutes, or until the sauce has thickened. 

To serve, carefully take the cucumber ribbon and fold it back and forth to create a pleated effect and place on the skewer, followed the piece of pork onto the bottom.

Garnish with coconut salt or sesame seeds.
