WHOLE CUCUMBER SALAD RECIPE

The viral trend of a whole cucumber salad was the inspiration for this recipe. We’ve made it simple with just a few ingredients, and our Ginger Soy Sauce is the star of the show, as it’s packed full of so much flavour already. With fresh ginger, lime juice, soy and chilli, this recipe is a taste sensation. It can be enjoyed by itself, or we recommend it as a side serving with a main meal. 

Ingredients:

1 large cucumber

2 tbsp AFR Ginger Soy Sauce

1 tbsp sesame oil

1 tbsp rice wine vinegar

2 tbsp Chilli Oil (including all the crispy bits)

Squeeze of honey

Sesame seeds

Spring onions, to garnish

Method:

You will need a jar with a lid or a large container (so that you can shake the salad)

Begin by slicing the cucumber as thin as possible, preferably with a mandolin.

Place all the ingredients into the jar, place the lid on tightly and shake for 30 seconds until everything is combined.

Pour out onto a plate and garnish with spring onions and extra sesame seeds.
