TOMATO, CAPSICUM & CHILLI CRACKERS

Makes 20

Ingredients:

1 Red Capsicum

1 Green Capsicum

1 Large Tomato (2 if smaller)

1 tablespoon Olive Oil

4 Tablespoon Asian Food Republic Sweet Chilli Sauce

Salt & Pepper, to taste

20 Crackers

150g Cream Cheese, softened

Method:

Begin by chopping the tomatoes into quarters and removing the seeds, then dice into small cubes, roughly ½ centimetre pieces. Repeat this with the red and green capsicums, ensuring everything is a similar size. Place into a bowl and add the olive oil, sweet chilli and season with salt and pepper to taste. Spread out the crackers onto a platter or serving board and spread roughly 1 tablespoon of cream cheese onto each cracker and top with 1 tablespoon of the tomato mixture onto each cracker.
