SPICY PORK NOODLES

This spicy pork mince noodle recipe is a bold and flavourful dish that combines heat, sweetness, and savoury depth. The tender, juicy pork mince is stir-fried until golden, absorbing the rich, salty notes of our ginger soy sauce, while the sweet chilli adds a balanced kick of heat and sweetness. The instant noodle sauce ties everything together with its deep, savoury richness, coating each noodle in a velvety layer of flavour. Finished with fresh coriander and a sprinkle of chilli peanuts for added texture, it's a satisfying, crave-worthy meal with layers of complex flavours that hit all the right notes.

Serves 4

Ingredients:

400g minced pork

3 cloves garlic, minced

2 tbsp sesame oil

200g ramen noodles

Sauce

1/4 cup AFR Instant noodle sauce

4 tbsp AFR Ginger soy sauce

3/4 cup chicken stock

1 tbsp chilli flakes

3 tbsp AFR Sweet chilli sauce

Garnish (optional)

Coriander, finely chopped

2 spring onions, finely sliced

50g AFR Chili peanuts, finely chopped

Method:

Using a heavy-based frying pan or wok, heat the pan to a medium heat. Add the sesame oil and minced garlic to the pan. Fry the garlic for one minute until golden brown.

Turn the heat to high and add the minced pork. Use a wooden spoon to break up the mince and cook for about 10 minutes, until slightly browned. 

Combine all the sauce ingredients except the sweet chilli sauce and add to the pan with the cooked pork mince, stirring well.

Turn the heat to medium and simmer to reduce the sauce for around 8 minutes.

While the sauce is thickening, cook your desired noodles until soft. (Cooking times will vary depending on the type of noodles, see instructions on the packet).

Once the sauce is reduced, stir through the sweet chilli sauce and cook for 2 minutes.

Drain the noodles and add to the pork mice and combine. 

Garnish with coriander, spring onions and chopped peanuts. 

Notes:

  • The spicy pork can be served on top of the noodles or can be combined before serving.

  • Any noodles of your choice can be used for this recipe or with rice if you prefer.

  • Serve with steamed or stir-fried Asian greens.
