SALMON PRAWN CRACKER BITES

Makes 12-15

Ingredients:

Prawn crackers (Pre made or the ones you cook at home)

300g Salmon fillet

¼ cup AFR Ginger Soy sauce

1 ripe avocado, finely diced

½ cucumber, finely diced

1 spring onion, finely sliced

½ cup finely shredded iceberg lettuce

AFR Japanese Coconut salt, to garnish

Sauce:

½ cup mayonnaise

2 tbsp AFR Sweet Chilli sauce

1 tbsp AFR Ginger Soy Sauce

2 tbsp tomato sauce

1 tbsp lime juice


Preheat the oven to 180 degrees celsius. 

Take the salmon fillet and place on a tray. Brush on the ginger soy sauce and bake for 8-10 minutes or until cooked. 


Place the sauce ingredients into a bowl and whisk together.

Take your prawn cracker and place shredded iceberg lettuce, spring onion, avocado and cucumber on the bottom. Drizzle over 1 tbsp of sauce. Place the flaked salmon fillet on top and garnish generously with Japanese coconut salt.
