PLUM DRIZZLE MUFFINS
Our plum drizzle muffin recipe is a simple but delightful treat, offering a perfect balance of sweetness and tartness. The soft, buttery muffin base complements the juicy, slightly tangy plum drizzle that bursts with flavor in every bite. With a touch of vanilla and cinnamon these muffins are fragrant and irresistible.
Makes 12 small cupcakes or 6-8 muffins
Ingredients:
100g unsalted butter, melted
1/2 cup caster sugar
1 egg
1 tsp vanilla essence
1/2 cup milk
1 cup self-raising flour
1/2 cup AFR plum drizzle
icing sugar to garnish, optional
Method:
Pre heat your oven to 160 degrees.
In a large mixing bowl, whisk together melted butter, sugar, egg, vanilla and milk.
Sieve self-raising flour into your mixture and fold through with a spatula until combined and smooth.
Fold 3 tablespoons of plum drizzle through the mixture. Stir through gently and do not over mix as you want a swirl of plum through your muffins.
Apply a spray of oil to your muffin tin to ensure they don’t stick. You can also use paper cases or silicone cases instead.
Fill each muffin case or tin with the mix, filling to roughly 1cm below the top of each tin or case.
Add 1 teaspoon of plum drizzle to the top of each muffin before baking.
Place in your oven for 18-20 minutes. Check the muffins are cooked by inserting a clean skewer into the centre and if it comes out clean they are cooked.
Dust with icing sugar before serving.
Note: These can be cooked in an air fryer too. Use a silicone case for each muffin. Bake at 160 for around 14 minutes. The exact cooking time will depend on your air fryer.
