GRILLED BEEF SKEWERS

These tasty skewers using our ginger soy sauce as a marinade combine succulent beef and charred vegetables for a zingy and flavourful dish. Paired deliciously with pita, cous cous, or a fresh salad.

Ingredients:

700g beef sirloin, cut into 2.5cm cubes

1 red capsicum, cut into chunks

1 green capsicum, cut into chunks

1 zucchini, cut into chunks

1/4 cup ginger soy sauce

2 tbsp olive oil

2 tbsp balsamic vinegar

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp smoked paprika

1/2 tsp salt

1/4 tsp ground black pepper

Wooden or metal skewers

Method:

If using wooden skewers, soak them in water for about 30 minutes to prevent burning during cooking.

To create the marinade, in a bowl, combine the ginger soy sauce, olive oil, balsamic vinegar, minced garlic and spices, and mix well.

In a shallow dish add the beef cubes and pour half of the marinade over, then toss to coat evenly. Cover and refrigerate for at least 1 hour (or up to overnight) to let the flavours develop.

Preheat your grill or grill pan over medium-high heat. Thread the marinated beef cubes onto the skewers, alternating with chunks of capsicum and zucchini.

Place the skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are charred and tender.

Brush the remaining marinade over the skewers during the last few minutes of grilling for extra flavour. Once cooked, remove the beef and vegetable skewers from the grill and let them rest for a few minutes before serving.

Feel free to use other vegetables such as red onion or cherry tomatoes.
